For a very long time Chef Benny Rivera had the idea of creating a unique, colorful and whimsical character.  Well, here we have the result!

In this two day workshop, you will learn step how to create this sculpture out of cake. Step-by-step we will create the balance of the armature, sculpt the non-edible pieces, and sculpt the cake itself. 

The base armature and all materials will be provided for you.

During this two day workshop students will learn:

  • How to design and create a structure support system for defying gravity cakes.
  • How to properly select the tools and materials for structure support systems.
  • How to plan distribution of cake weight correctly on structure support system.
  • How to stack, fill and cover cakes properly for sculpted cakes.
  • How to manage chocolate ganache on sculpted cakes.
  • How to sculpt animals using both, additive (modeling) process and subtractive (carving) process.
  • How to work with fondant and modeling chocolate.
  • How to hand craft small 3D ornate details.
  • How to create different types of textures.
  • How to select the correct colors for your designs, and apply different painting techniques

To participate in the workshop, students should ideally have basic knowledge of covering cakes with fondant.

Trained through courses from the French Culinary Institute and The Institute of Culinary Education, Chef Rivera uses the most advanced techniques to bring a remarkably clean element to modern cake design.  Chef Benny not only specializes in three dimensional sculpted cakes but also pumpkin carving and chocolate sculpting in addition to sugar paste flowers, buttercream, royal icing and creative fondant and modeling chocolate techniques. 

He was featured on the first season of Fabulous Cakes and Secret Wedding both from the network TLC (The Learning Channel).  He also has been a contestant on multiple shows such as The Food Network Challenge, Sugar Dome, Halloween Wars Season 3 and 4 and the Macy’s Cake Spectacular Show all from the Food Network.  He also appeared at the Rachel Ray Show from the ABC Network and Que Noche from Telemundo. 

Class is taught in English, but Benny is bilingual and welcomes Spanish-speakers to the class! 

Breakfast and lunch will be provided each day.  And, of course, cake will be served as well!
